The problem with giving child support and calling it something else is that child support is always modifiable in court. So....you could give her $3K a month in "alimony," and $0 in child support....and she can come back in a year or two, and say that now she would like some "child support" to go along with the "alimony" you're already paying. Right now....she likely feels at least a little guilty...and things are going smoothly. Just don't count on that feeling lasting. Most certainly, I wouldn't lock myself into a court order for $3k in alimony for the next 11+ years....based on your current amicable agreements.

Personally, I don't think anyone who cheats should get alimony...but anyway....

Her deal sounds "easier," but it does not sound "better," IMO. I'd pay the correct CS, pay the ordered SS (get your tax break for a few years), and certainly address claiming the children no less than every other year.
