It depends on the country, but in many US friendly countries, you can be pursued.

If your EX is so unstable, you should be able to prove it in court. I suggest you move to Oregon, wait six months, file for a jurisdiction change and then file for custody. Prove the ex is unstable and you could get custody.

Take the child to another country, wait 3 years, have the child taken, and never see the child again.
